2 plantains, medium size, ripe

1 whole nutmeg

cup canola oil


1. Peel plantain by scoring a line in the skin without penetrating the fruit and peel the skin sideways, not up and down. Cut into circles.

2. Heat canola oil in a large skillet and panfry the plantain on both sides until golden brown. Takes about 5 minutes. While frying, season with salt and pepper; and grate fresh nutmeg onto both sides.
