This delicious bean dip is perfect for game night.
Directions for: Bissara (Fava Bean Dip)


3 cup frozen fava beans, blanched, and, peeled

cup reserved cooking liquid

1 clove garlic, minced

1 lemon, juice only

cup extra virgin olive oil

tsp ground cumin, seed, toasted

cup fresh chopped parsley

tsp salt


1. Blanch and remove skins of fava beans.

2. Boil the peeled fava beans until tender

3. Drain the beans and reserve cup liquid.

4. In a food processor, combine half the beans, the reserved liquid, garlic and the lemon juice.

5. Pulse until the mixture is smooth, scraping down the sides, if needed.

6. Add the olive oil, and remaining beans and pulse until smooth.

7. Add spices, salt and pepper and pulse.

8. Transfer to a serving bowl, add the parsley and stir.

9. Serve with warm pita wedges.

10. Yield: 2 cups
