olive oil

salt and pepper to season

Freshly chopped parsley to garnish


1. Thinly slice the aubergines and brush both sides of each slice with olive oil. Season with salt and pepper. Lay on a baking sheet and bake in a 500F/260C oven 15 minutes per side. Toss with salt, pepper, olive oil and freshly chopped parsley. Serve warm or at room temperature.
