Directions for: Oven Roasted Tomatoes with Thyme and Garlic


2 lb(s) Roma tomatoes, ripe but firm

3 oz fine sea salt

2 oz white granulated sugar

1 bunch of thyme, picked

5 clove of garlic, sliced

Olive oil, to taste


1. Preheat oven to 250 degrees F.

2. Line a baking sheet with parchment paper.

3. Wash and dry the tomatoes. Cut them in half lengthwise and remove the seeds.In a small bowl, mix the salt and sugar with the thyme leaves. Add the tomatoes to a large bowl. Sprinkle with the salt and sugar mixture. Add the garlic slices. Sprinkle with some olive oil and mix well to coat.

4. Place the tomatoes cut side up on the baking sheet lined with parchment paper or on a rack. Bake until tomatoes are cooked through, about 2 hours (depending on the size).
